Baked sole fillets with potatoes, cherry tomatoes and white wine
I try to eat fish once a week. I realized that it’s been two weeks since I haven’t bought any kind of fish. Anyway, it was too late to go and buy something fresh, but I remembered I had a pack of sole fillets in the freezer. When it comes to preparing fish, I prefer to bake it. I wish I could grill it, but alas… Last week I made a fresh tomato sauce because I found some decent tomatoes that almost tasted like the summer ones. Well, almost 🙂 I decided to use the rest of the sauce for this dish. Baked sole fillets with potatoes, cherry tomatoes, and white wine sounded like a good idea. If you decide to make it, here is what you will need:
1. Set oven to 400F
2. Peel the potato and cook in boiling water for 20 min. Cut tomatoes into halves.
3. Sprinkle a baking pan with olive oil. arrange 1 layer of potatoes, sprinkle with salt and pepper, add fillets and cherry tomato and cover with the rest of potatoes. Sprinkle with olive oil, a thick layer of tomato sauce, pressed garlic clove, chopped parsley and put in the oven. Bake for 20 minutes. Pour a glass of white wine and enjoy!
Serve with some crusty bread so you don’t waste any of that sauce. 🙂
