Leek stew with potatoes and bacon
I Leek it!
If you like leek, then you will love this leek stew with potatoes and bacon. You don’t have to put bacon if you don’t like it, or you simply don’t eat meat. I had two slices of bacon and wanted to use them. After all, bacon always gives a special, smokey note to the dish!
You will need:
2 crushed garlic cloves
1 beef/vegetable bouillon cube
100 g bacon
1. Carefully wash the leeks to remove the dirt. Finely chop and transfer them in a colander, then rinse with water one more time.
2. If you decide to make the stew with bacon, cut it, put it in a skillet and cook for a couple of minutes.
3. Add garlic, potatoes, toss and cook for additional 5 minutes.
4. Add leeks, beef cube, water, cover and cook for 35 minutes. Pour the water so that it is two fingers above the vegetables.
Serve with crusty bread and plain Greek yogurt.
